About our Chef
Our Pastry Chef, Heather Dolton, began her career in the Art of Pastry in 1995 upon graduating from Paul Smith's College of Arts and Sciences with a degree in Baking and Pastry Arts. As a novice in upstate New York, her early days were spent in independent bakeries making specialty cakes, bread, danish and bagels.
Upon relocating to the west coast she began her training in 5 star hotels beginning in California at the Lowes Coronado Bay Resort. She relocated to Arizona and worked her way up at the Phoenician Resort and Spa in Scottsdale, focusing on fine dining desserts and brunch pastries. After opening the St. Regis Resort and Spa in Dana Point California, she moved to Nevada and eventually became the Executive Pastry Chef of the Mirage Hotel and Casino in Las Vegas.
It was while on this path her passion for all things dessert began to focus on what she had always dreamed of doing, making beautiful cakes. It was this medium that allowed the freedom of expression and creativity that drew her to the pastry business long ago.
